Veggie Week

Mung Bean Curry:

Ingredients
 
1 small onion
Olive oil
cup of mung beans
3/4 cups of water
garlic
red chillies
ginger
turmeric
fresh coriander
Salt, to taste
yogurt
 
Method

  1. Boil the mung beans in water in a pan for 1hr, until soft.
  2. Fry onions in some olive oil until nice and soft.
  3. make a paste with, garlic,ginger and chilli add to onions and cook for few minutes.
  4. When the mung beans are cooked, most of the liquid will be absorbed add this to the onions, with a pinch of salt. Cook for 15/20mins.
  5. Serve with yogurt and fresh coriander.
  6. Enjoy.
