Mung Bean Curry:
Ingredients 1 small onion Olive oil cup of mung beans 3/4 cups of water garlic red chillies ginger turmeric fresh coriander Salt, to taste yogurt Method - Boil the mung beans in water in a pan for 1hr, until soft.
- Fry onions in some olive oil until nice and soft.
- make a paste with, garlic,ginger and chilli add to onions and cook for few minutes.
- When the mung beans are cooked, most of the liquid will be absorbed add this to the onions, with a pinch of salt. Cook for 15/20mins.
- Serve with yogurt and fresh coriander.
- Enjoy.
